The olive oil is the juice of the olive; it is thus a totally natural product stemming from a fresh product. A fruit (an olive) very mature amounted to a fruit full of oil. The olive oil is then the fat extracted from some fruits of the olive tree. It consists about 99 % of lipids that is of fats.
This product exists since millenniums and was produced in the Mediterranean Basin. It is an inescapable ingredient in the “Mediterranean cooking”.
It is a product which, since a few decades, is worldwide known integer. Furthermore, it is one of the vegetable oil most wanted and appreciated today in the world of the gastronomy, in particular because of its intense flavor, but also, of its content in vitamins and in fatty acids, that allow to compose a balanced diet.
