The cultivation of olive trees allows the production of olive oil, however an olive tree doesn’t produce only one variety of olive oil.
Indeed there are several varieties of olive oil:
– Extra virgin olive oil : this oil is obtained mechanically which doesn’t affect the oil quality.
– Refined olive oil : this oil is obtained thanks to refining of olive oil.
– Olive oil compound : this oil is obtained thanks to cutting of virgin olive oil and refined olive oil.
– Oil crude olive-pomace : this oil is obtained by the treatment to solvent olive pomace.
– Oil refined olive-pomace : this oil is obtained thanks to the refined of oil crude olive-pomace.
– Olive pomace oil : this oil is obtained thanks to the cutting of virgin olive oil and oil refined olive-pomace.
As you can see above, there are a lot of varieties of olive oil, each one has owns characteristics.
These oils aren’t accessible to everybody, indeed some olive oil are reserved to trading or to the industry.
Extra virgin Olive Oil, THE ORIGIN
There is a Greek myth which tells about how Athens was named. There were two gods who wish to name the great city with it's name, Atenea and Poseidon.
The Oracle of Delfos said that the one who gives the city the best gift would be the one to name it.
